The inspiration for this pie came from buying too much pumpkin at the bazaar and having a little extra dough left over from the previous evening. It takes very few ingredients and you can substitute in red or green peppers, squash, eggplant, or other vegetables for the bottom layer. Many people think that it tastes like quiche, and can't believe that there are no eggs involved! The great part about this pie is that it serves well for breakfast, lunch or dinner. Enjoy!
